{"id":2188,"date":"2021-01-18T09:08:04","date_gmt":"2021-01-18T09:08:04","guid":{"rendered":"https:\/\/domusiulii.it\/?p=2188"},"modified":"2021-01-18T09:08:07","modified_gmt":"2021-01-18T09:08:07","slug":"la-gubana","status":"publish","type":"post","link":"https:\/\/domusiulii.it\/en\/la-gubana","title":{"rendered":"Gubana"},"content":{"rendered":"<p>Mount Matajur, also known as Monte Re (king mountain), is the mountain nearest to Cividale and it has always marked the border between different countries, Italy and Slovenia in the present, Italy and the Austrian territory in the past. Here, in the eastern part of our region, languages and traditions have always blended together and a sweet product of this encounter of cultures is Gubana, the sweet that most of all symbolises Cividale. This dessert was born in the Natisone valleys and in the city of Cividale, and it was traditionally eaten during religious holidays like Eastern and Christmas. Baked in the oven, this bread- like sweet has a typical coiled shape and it is filled with walnuts, pine nuts, raisins, sugar and even grappa (a really strong alcoholic beverage used as a digestive). Its name comes from the Slovenian word \u201cguba\u201d which means fold, and it is thought to be the friulian version of the Slovenian sweet \u201cPotizza\u201d. Gubana dates back to the XII century, when it was mentioned as one of the sweets offered during a visit of the Pope in 1409. \nThe traditional recipe is as follows:<\/p>\n\n\n\n<p><strong>For the dough:<\/strong>220g flour\n60g butter\n50g sugar\n20g honey\n40g milk\n1 egg + 30g of yolk \n10g brewer\u2019s yeast\n2g salt<\/p>\n\n\n\n<p><strong>For the filling:<\/strong>140g walnuts\n60g sugar\n60g raisins\n40g amaretti \n30g biscuits\n30g pine nuts \n20g butter\nHalf a lemon\nRum \nGrappa\nSalt\nEgg white<\/p>\n\n\n\n<p>Buon appetito!<strong> Happy baking<\/strong>&#8230;<\/p>","protected":false},"excerpt":{"rendered":"<p>Il Monte Matajur, detto anche Monte Re, domina la pianura friulana e la citt\u00e0 di Cividale del Friuli, \u00e8 terra di confine prima con l&#8217; Impero austriaco, poi con la Jugoslavia ed ora con la Slovenia.
